Review
Established in 2012, the Dingle Distillery is among the newer wave of Irish whiskey producers currently reenergizing the category. While sourcing remains common in the space, Dingle produced all of the single malt for this release, which is aged in bourbon, sherry, and port casks. There’s a creamy, cereal-like quality to this dram, which seems to recall pot still whiskey but comes instead from the American oak. Honey and ripe fig aromas build about that character, while caramel and earthy malt notes on the palate set up a lasting finish.
