Drink creator Nick du Mortier always keeps his bar at Chicago’s Bar Pendry stocked with lush mint crowns and fresh cucumber juice for non-alcoholic drinks. So when he wanted to create a refreshing cucumber vodka cocktail, he simply mixed the fresh cuke juice with citron vodka, agave, and lemon juice. “It tastes like a dew-laden garden at dawn,” he says.
