Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition
Review
Arriving at the tail end of 2021, this limited-edition Redbreast release is initially aged in bourbon and oloroso sherry casks, then finished for up to 22 months in Pedro Ximénez hogsheads. For those unfamiliar with the vessel, they’re smaller than standard sherry barrels, which has the effect of intensifying the influence of fortified wine in the single pot still whiskey. Attractively sweet, it shows a nice, nutty complexity, and lands with a velvet texture. This is not a limited-edition release you’ll want to miss out on.
