Where 2020’s Boss Hog VII was an example of pure decadence — all maple syrup, cinnamon, and vanilla — this year’s edition of WhistlePig’s flagship rye arrives with a brighter, tropical fruit profile, and enjoyable undertones of caramel and molasses. The influence of the high-toast, Philippine rum barrels used to finish this release continues to unfold on the palate, matching the ABV of the cask-strength spirit and upping the tempo of the experience with each sip. There’s a clear intent to this release and the combination of base spirit and finishing cask works remarkably well. While the Boss Hog is undoubtedly pricy, this series continues to rank as one of the most interesting and enjoyable on the rye whiskey calendar.
