The Spiked Eggnog | VinePair

Ingredients

• 2 cups whole milk
• 2 cups heavy cream
• 2 cinnamon sticks
• 2 freshly grated nutmegs
• 1 vanilla bean, split and seeds removed
• 6 egg yolks
• ⅔ cup granulated sugar
• 3 ounces Cognac
• 3 ounces spiced rum

Directions

1. In a saucepan, add milk, cream, spices, and vanilla and heat until boiling.
2. Once boiling, remove from heat and allow to steep for 30 minutes.
3. In a separate bowl, whisk together egg yolks and sugar.
4. Slowly pour spiced, heated milk into egg-sugar mixture, stirring gently. Be careful not to add too quickly or you’ll end up with scrambled eggs.
5. Continue slowly adding mixture until all is combined.
6. Add Cognac and rum to the mixture.
7. Serve cold with a grating of nutmeg on top.
