Since the Negronis at Chicago’s The Violet Hour tend to be on the boozy side, Toby Maloney, The Violet Hour barman and co-author of The Bartender’s Manifesto, created this white Negroni riff. Even though the cocktail does feature a high-proof gin, it’s supported by Dolin Blanc vermouth “whose essence is reminiscent of a picnic in the Auvergne-Rhône-Alpes,” says Maloney. And Salers serves as the drink’s embittering backbone.
To finish the drink, drop a Luxardo cherry, “the polka dot,” into the glass, and then Maloney encourages expressing so much lemon oil across the top of the drink that “there appears a slick rainbow when candlelight hits it just right.”
