Bartender Jacoby Morciglio of Adrift in Denver loved the combination of coffee and fruit in the tropical classic Mr. Bali Hai, but he wanted to play up the bitterness of the coffee. For this twist, he trades pineapple juice for grapefruit to enhance the smoke and funk of the mezcal and rum.
