Josh Ibañez first experimented with this recipe in Houston with his managers at the time, Terry Williams and 2018 Imbibe Bartender of the Year Alex Negranza, looking for a cocktail that sipped like a Martini, but still skewed tropical. Now at Rumba in Seattle, he’s swapping some of the original recipe’s gin for rhum agricole from Martinique.
