The Story Behind The Tabaré’s Lover’s Margarita

Accented with antique-style finds, this charming Uruguayan restaurant serves up traditional dishes rooted in Spanish, Italian, and other European cuisines. Here the food is hearty and the aesthetic is heartwarming — almost as heartwarming as its special Lover’s Margarita.
Inspired by February, the month of love, this cocktail was first created as a way to put a Valentine’s Day twist on the classic Margarita. It begins with a base that is split between tequila and mezcal in order to create a balanced blend of soft citrus and smoky agave. But what really sets this Marg apart is the frothy foam topping that is a result of the addition of a dry shaken egg white.
Like much of the fare at Tabaré, the Lover’s Margarita is a simple concoction elevated by humble ingredients and a touch of spice. Its velvet-like top, lightly spiced Tajín rim, and balanced notes of citrus and heat helped this once special item find a lasting home on Tabaré’s menu.
Ingredients
- Tajín seasoning
- 1 ounce lemon
- 3/4 ounce agave nectar
- 1 ounce tequila
- 1 ounce mezcal
- 1 egg white
- Garnish: lime wedge
Directions
- Rim a coupe glass with Tajín seasoning and set aside.
- Add all ingredients to a cocktail shaker and dry shake.
- Add ice to cocktail shaker and shake again.
- Strain into glass
- Serve with lime wedge garnish
